Summer means salads. Something nice and light that you can enjoy without slaving over a hot oven. I love this salad .. it screams summer holidays. I mean, prawns and mango are summer all over!
You’ll need to use a little bit of your own discretion here as I don’t have any specific, I usually just throw things together!
Prawn & Mango Salad
What you need …
Green salad leaves … your personal preference, I use spinach & rocket or whatever salad leaves you have and chop it up a little bit so the kids don’t complain of big leaves
500g cooked, peeled prawns … ( or more if you really want lots! )
cherry tomatoes
fetta, cubed / crumbled
olives ( *I love them, the family don’t, so I sometimes just add them to my serve đ )
red onion, thinly sliced
Dressing
1/4 cup orange & mango juice
1 tablespoon French dressing ( or more, or less, depends on your taste )
seasoning
What to do …
I am going on the assumption that you know how to put a salad together … salad leaves in a bowl / plate, all the pretties on top.
Combine the dressing ingredients and drizzle over the top depending on your taste.
Perfect for a quick, easy, healthy lunch / dinner. If you are feeling super adventurous why not grab a piece of crusty bread with butter of course!
